How to make it

  • Boil sugar and water until it threads when dropped from tip of spoon
  • Pour hot syrup in a fine stream on the beaten egg whites to which salt has been added.
  • Beat mixture until cool.
  • Add well beaten egg yolks. Set aside.
  • Sift flour once, measure 1 cup again.
  • Add cream of tartar and sift again 3 times.
  • Fold carefully into egg mixture.
  • Add orange extract.
  • Pour into UNGREASED angel food pan.
  • Bake at 325 degrees for 50-60 minutes.
  • Serve plain or a simple light frosting.
