Imperial Sunshine Cake Recipe
My Mom's favorite dessert for us and company. It is time consuming but sure is tasty when finished. This cake is a treasure. The secret is the finished texture.

Ingredients
  • 1 1/2 cup sugar
  • 1/2 cup water
  • 6 eggs beaten separately ( all yellows/all whites)
  • 1/4 tsp salt
  • 1 cup Swansdown cake flour
  • 3/4 tsp cream of tartar
  • 1 tsp orange extract

Directions
  1. Boil sugar and water until it threads when dropped from tip of spoon
  2. Pour hot syrup in a fine stream on the beaten egg whites to which salt has been added.
  3. Beat mixture until cool.
  4. Add well beaten egg yolks. Set aside.
  5. Sift flour once, measure 1 cup again.
  6. Add cream of tartar and sift again 3 times.
  7. Fold carefully into egg mixture.
  8. Add orange extract.
  9. Pour into UNGREASED angel food pan.
  10. Bake at 325 degrees for 50-60 minutes.
  11. Serve plain or a simple light frosting.
