Zwieback  Paximathia Recipe
Similar to Biscotti but more tender. I found this recipe in "Culinary Gifts from the Greeks." Courtesy of Mrs. Aliki Asime. My family tops the slices with Cream Cheese.

Ingredients
  • 1 cup Oil
  • 1 cup Sugar
  • 3 Eggs
  • 2 tsp. Baking Powder
  • 1/2 cup Slivered Almonds, roasted
  • 3 tsp.Vanilla
  • 3 tsp. Brandy
  • 3 1/2 to 4 cups Flour

Directions
  1. Beat oil with sugar and eggs.
  2. Add vanilla, brandy, baking powder and almonds.
  3. Mix well.
  4. Add flour. The dough will be soft.
  5. Shape dough into four flat loaves and place on baking sheets.
  6. Bake for 30 to 40 minutes at 300 degrees.
  7. Remove from oven and allow to cool slightly and slice into 1/2 inch bars.
  8. Place cut side down on baking sheets. (doesn't matter which side :)
  9. Return to oven and bake for 40 more minutes at 200 degrees.

I lightly sprinkled the baking sheet with sugar.
*You can taste the brandy but it isn't overpowering.
