How to make it

  • Place chicken breasts in saucepan which they fit comfortably.
  • Add just enough white wine to cover.
  • Bring to boil and immediately reduce heat so wine barely ripples.
  • Simmer breasts until they are done, about 12-15 mins.
  • The meat should be moist and opaque white throughout;cook only to just beyond the pink stage.
  • Remove breasts with a slotted spoon and drain well.
  • Cool to room temperature before shredding using 2 forks.
