Marinated Vegetable Salad Recipe

This is a cold vegetable salad that makes a great side dish for a buffet or picnic.

Ingredients
- 8 cups of assorted vegetables
- (cauliflower, mushrooms, zucchini,
- carrots, cherry tomatoes, radishes)
- MARINADE:
- 3/4 cup real lemon
- 3/4 cup vegetable oil
- 3 Tbsp sugar
- 1 Tbsp salt
- 1/2 tsp oregano
- 1/2 tsp pepper
Directions
- Cut up all vegetables to bite size pieces and combine in a large bowl.
- Combine all the ingredients for the marinade.
- Pour over the vegetables and toss gently.
- Refrigerate for at least 6 hours to let the marinade work.

Debra47--Warm weather is not an issue here in MS. Most days are low 90's with high humidity. My shopping hours are before 9am and after 8pm.
