This is a cold vegetable salad that makes a great side dish for a buffet or picnic.

Ingredients
  • 8 cups of assorted vegetables
  • (cauliflower, mushrooms, zucchini,
  • carrots, cherry tomatoes, radishes)
  • MARINADE:
  • 3/4 cup real lemon
  • 3/4 cup vegetable oil
  • 3 Tbsp sugar
  • 1 Tbsp salt
  • 1/2 tsp oregano
  • 1/2 tsp pepper

Directions
  1. Cut up all vegetables to bite size pieces and combine in a large bowl.
  2. Combine all the ingredients for the marinade.
  3. Pour over the vegetables and toss gently.
  4. Refrigerate for at least 6 hours to let the marinade work.

Just bookmarking this one! I think it would be great for this summer if only we would get warmer weather.


Debra47--Warm weather is not an issue here in MS. Most days are low 90's with high humidity. My shopping hours are before 9am and after 8pm.
