Ingredients
  • For shrimp marinade:
  • 2# medium shrimp
  • juice of 2 limes
  • ½ cup tequila
  • 2 garlic cloves, minced
  • salt and pepper, to taste
  • 2 tbsp evoo
  • For tostada:
  • 4 tostadas
  • 2 tbsp evoo
  • ½ onion, chopped
  • 4 ears fresh corn
  • 2 14.5 cans black beans, drained and rinsed
  • ¼ cup cilantro
  • Topping:
  • Tomatillo sauce (in my recipes: Ken’s Green with Envy sauce)
  • Fresh tomato
  • 1 avocado
  • Cilantro
  • 2 limes

Directions
  1. Mix all shrimp marinade ingredients in a small bowl, pour over shrimp and let marinade for 12-15 minutes (any longer and the lime juice will begin to cook the shrimp)
  2. Grill the corn till its nice and done, let cool and remove the kernels for the cob.
  3. Heat a sauté pan over medium heat, add evoo and sauté onion till soften but not browned, approx. 5 minutes. Add the beans, corn, and cilantro. Cook till warmed through, another 5-7 minutes.
  4. Thread the shrimp onto skewers and grill for 1-2 minutes per side.
  5. Top each tostada with the corn and bean mixture, then add 4-5 of the grilled shrimp, top with the tomatillo sauce, tomato, avocado, cilantro, and a squeeze of fresh lime juice.
