How to make it

  • Mix all shrimp marinade ingredients in a small bowl, pour over shrimp and let marinade for 12-15 minutes (any longer and the lime juice will begin to cook the shrimp)
  • Grill the corn till its nice and done, let cool and remove the kernels for the cob.
  • Heat a sauté pan over medium heat, add evoo and sauté onion till soften but not browned, approx. 5 minutes. Add the beans, corn, and cilantro. Cook till warmed through, another 5-7 minutes.
  • Thread the shrimp onto skewers and grill for 1-2 minutes per side.
  • Top each tostada with the corn and bean mixture, then add 4-5 of the grilled shrimp, top with the tomatillo sauce, tomato, avocado, cilantro, and a squeeze of fresh lime juice.
