Tomatillo Shrimp Tostada

- For shrimp marinade: shopping list
- 2# medium shrimp shopping list
- juice of 2 limes shopping list
- ½ cup tequila shopping list
- 2 garlic cloves, minced shopping list
- salt and pepper, to taste shopping list
- 2 tbsp evoo shopping list
- For tostada: shopping list
- 4 tostadas shopping list
- 2 tbsp evoo shopping list
- ½ onion, chopped shopping list
- 4 ears fresh corn shopping list
- 2 14.5 cans black beans, drained and rinsed shopping list
- ¼ cup cilantro shopping list
- Topping: shopping list
- tomatillo sauce (in my recipes: Ken’s Green with Envy sauce) shopping list
- fresh tomato shopping list
- 1 avocado shopping list
- cilantro shopping list
- 2 limes shopping list
How to make it
- Mix all shrimp marinade ingredients in a small bowl, pour over shrimp and let marinade for 12-15 minutes (any longer and the lime juice will begin to cook the shrimp)
- Grill the corn till its nice and done, let cool and remove the kernels for the cob.
- Heat a sauté pan over medium heat, add evoo and sauté onion till soften but not browned, approx. 5 minutes. Add the beans, corn, and cilantro. Cook till warmed through, another 5-7 minutes.
- Thread the shrimp onto skewers and grill for 1-2 minutes per side.
- Top each tostada with the corn and bean mixture, then add 4-5 of the grilled shrimp, top with the tomatillo sauce, tomato, avocado, cilantro, and a squeeze of fresh lime juice.
