- 3 # honeycomb tripe shopping list
- 2 pigs feet- split shopping list
- 2 lg (#5) cans of hominy shopping list
- 1 can enchilada sauce shopping list
- 1 1/2 quarts of chicken stock shopping list
- 5 cloves of garlic, crushed shopping list
- 1/4 cup dried oregano shopping list
- 1 large onion-chopped shopping list
- 1 lime sliced shopping list
- 1/2 tsp. fresh ground pepper shopping list
- salt to taste shopping list
How to make it
- Wash and cut tripe into bite size pieces
- put in a large soup pot with pigs feet,cover with water and add garlic and bring to a boil, for 30 minutes, add rest of the ingredients except onion and lime, reduce heat and simmer for 2-2 1/2 hours- until meat is very tender
- serve with chopped onions and sliced lime.

Wonderful, my friend...menudo is something I really love and this is a fabulous recipe. ^5 Thank you. Printed out, saved and will cook as soon as I can get the ingredients. My mamma and I both loved tripps but pappa uh uh!
