Chewy Ginger Snaps Recipe
Diced peices of crystallized ginger add an amazing bite and zest to these cookies, while a sugar topping adds crunch. (found in gingerpeople website)

Ingredients
  • 3/4 cup butter, softened
  • 1 cup sugar (granulated)
  • 1/4 cup molassas
  • 1 egg
  • 2 cups flour (sifted)
  • 1/2 tsp group ginger
  • 1 tsp cinnamon
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 3 1/2 oz crytallized ginger, chopped coursely

Directions
  1. Preheat oven to 375 degrees F.
  2. Combine softened butter, sugar, molasses and egg.
  3. Beat Well.
  4. Sift dry ingredients together.
  5. Add to the wet mixture.
  6. Add Crystallized ginger.
  7. Chill for 1 hour.
  8. Form 1 inch balls and roll in granulated sugar.
  9. Place on a greased cookie sheet, 2 inches apart.
  10. Bake 8-10 minutes.
