- green tomatoes, 1 peck basket shopping list
- 1 green pepper shopping list
- 2 red peppers shopping list
- 8 large onions shopping list
- 1 cup salt shopping list
- 2 quarts vinegar shopping list
- 2 cups sugar shopping list
- 1 teaspoon mustard seed shopping list
- 2 teaspoons cinnamon shopping list
- 2 teaspoons pepper shopping list
- 1 teaspoon cloves shopping list
- 1 teaspoon allspice shopping list
- 2 tablespoons ginger shopping list
How to make it
- Slice all the veggies VERY thinly. Add salt & let stand overnight to drain. (My mom did this right in the wooden peck basket & swears the wood taste added a certain something to the taste - I agree, but you can't find a wooden peck basket anymore. Somehow I don't think all those wet ingredients would be very appealing the next morning after sitting in one of those cardboard peck containers they have today. Yecccch!) (i.e., use a colander!)
- After sitting overnight (the veggies, not you!) add the veggies and the rest of the ingredients to a large pot. Boil 30 minutes & put into sterilized jars & seal.
