Have you ever even heard of picallii? My mom made this every summer at the end of the season to use up all the green tomatoes before frost. So good! Do they even make wooden peck baskets anymore?!

Ingredients
  • green tomatoes, 1 peck basket
  • 1 green pepper
  • 2 red peppers
  • 8 large onions
  • 1 cup salt
  • 2 quarts vinegar
  • 2 cups sugar
  • 1 teaspoon mustard seed
  • 2 teaspoons cinnamon
  • 2 teaspoons pepper
  • 1 teaspoon cloves
  • 1 teaspoon allspice
  • 2 tablespoons ginger

Directions
  1. Slice all the veggies VERY thinly. Add salt & let stand overnight to drain. (My mom did this right in the wooden peck basket & swears the wood taste added a certain something to the taste - I agree, but you can't find a wooden peck basket anymore. Somehow I don't think all those wet ingredients would be very appealing the next morning after sitting in one of those cardboard peck containers they have today. Yecccch!) (i.e., use a colander!)
  2. After sitting overnight (the veggies, not you!) add the veggies and the rest of the ingredients to a large pot. Boil 30 minutes & put into sterilized jars & seal.
