Black Eyed Pea Salad Recipe

Ingredients
  • 2 cups black eyed peas
  • 3 teaspoons ground coriander
  • 3 garlic cloves minced
  • 3 tablespoons fresh ginger grated
  • 1/2 teaspoon cayenne pepper
  • 1/4 cup olive oil
  • 1/8 cup red wine vinegar
  • 1 teaspoon salt salt
  • 1 teaspoon Hungarian paprika

Directions
  1. Soak peas then put in a pot with water to cover plus 1”.
  2. Add coriander, garlic, ginger and cayenne. Then cook for 1 hour.
  3. Prepare dressing by mixing together oil, vinegar, salt and paprika.
  4. Add to peas as soon as you remove them from heat.
  5. Allow to cool to room temperature then adjust seasonings and serve.

I love beans, and this recipe sounds great. Do the flavors of the ginger and coriander come out well in the beans? I love the combo. I always soak and cook my beans with garlic powder, because I LOVE garlic and the flavor comes through well.


I love the ginger taste in this, it adds just a spark of heat and it is very good.
