How to make it

  • Soak peas then put in a pot with water to cover plus 1”.
  • Add coriander, garlic, ginger and cayenne. Then cook for 1 hour.
  • Prepare dressing by mixing together oil, vinegar, salt and paprika.
  • Add to peas as soon as you remove them from heat.
  • Allow to cool to room temperature then adjust seasonings and serve.

    I love the ginger taste in this, it adds just a spark of heat and it is very good.

    I love beans, and this recipe sounds great. Do the flavors of the ginger and coriander come out well in the beans? I love the combo. I always soak and cook my beans with garlic powder, because I LOVE garlic and the flavor comes through well.
