Roasted Veggie Pasta Sauce Recipe
This sauce can be changed up to include whatever veggies you have in the fridge. Can be put on pasta or served as a warm dip with pita bread.

Ingredients
  • 1 large eggplant
  • 1 zucchini
  • 1 large onion
  • 1 head of garlic
  • 2 red, yellow or orange peppers
  • 2 roma tomatoes
  • Olive oil
  • Salt and pepper
  • Rosemary
  • Basil
  • Chili flakes if desired

Directions
  1. Chop up all veggies into equal sized pieces.
  2. Place on cookie sheet and drizzle with olive oil, making sure veggies are coated.
  3. Season with salt and pepper, a sprinkle of rosemary and basil.
  4. Roast in oven at 400 degrees for 30 minutes or until veggies are soft and carmelized.
  5. Put roasted veggies in food processor and whiz up. Add chili flakes here if you like a bit of kick!
  6. Serve over warm pasta or with pita bread as a dip.
