How to make it

  • Pre heat oven to 170 deg .
  • Grease a 26 cm pan .
  • Beat the butter and sugar until light and fluffy .
  • Add eggs one by one and beat .
  • Gently fold the flour and coconut .
  • Bake until firm .
  • Will take more than an hour

  • Dissolve over low heat the Lemon/Orange rind and juice , sugar and water .
  • Boil for 10 mins without stirring until thickens abit .
  • Keep aside abit of syrup and pour the remaining over the cake .

  • Boil the finely sliced Lemon/Orange over low heat for 5 mins .
  • Decorate the cake with it and dust with icing sugar
