Corkscrew Pasta Mushroom And Blue Cheese Salad Recipe

Ingredients

3/4 to 1 lb corkscrew pasta, cooked and drained ( we use whole wheat pasta )

1 cup sauteed mushrroms ( any kind )

2 Tbs chopped red onion

1/2 cup crumbled blue cheese

Coarse chopped Tbs of fresh basil, dill, oregano and parsley or to taste

Mayonaisse to bind

Aged Balsamic vinegar, mixed into the mayo ( start with 1 Tbs to taste )

salt and pepper to taste

Directions

Saute enough mushrooms in some olive oil/butter as desired l to make one cup and cool.

Simply mix all together.

Season to taste,

Serve warm or chilled
