How to make it

  • In a large microwaveable bowl, stir together the egg, sugar, salt, milk and tapioca, making sure the sugar is disolved. Let this mixture sit for 5 minutes.
  • Microwave the pudding for 8-10 minutes on high, stirring well every 2 minutes. Keep a close eye on the pudding near the end of the time to make sure it doesn't boil over and make a mess of your microwave.
  • Remove the bowl from the microwave and stir in the lemon zest and Grand Marnier.
  • Pour the pudding into 5 small ramekins. Place in the fridge for at least 30 minutes - more if you want a firmer pudding.

    This was delicious, I love orange or citrus and the Grand Marnier made this super special. *I added a tiny touch of rum too*

    I like it!
    I wanted some tapioca pudding, and I think this recipe will offer it a cool new dimension. Going to test this out in the morning. :-)
