Tapioca Pudding With Grand Marnier Recipe
This is a more grown-up version of your basic tapioca pudding recipe. I was playing around with different flavourings, and this was definitely the best one.

Ingredients
  • 1 egg, lightly beaten
  • 1/4 cup white sugar
  • 1/4 tsp salt
  • 2 1/2 cups milk
  • 3 tbsp quick tapioca
  • zest of one lemon
  • 1 tbsp Grand Marnier

Directions
  1. In a large microwaveable bowl, stir together the egg, sugar, salt, milk and tapioca, making sure the sugar is disolved. Let this mixture sit for 5 minutes.
  2. Microwave the pudding for 8-10 minutes on high, stirring well every 2 minutes. Keep a close eye on the pudding near the end of the time to make sure it doesn't boil over and make a mess of your microwave.
  3. Remove the bowl from the microwave and stir in the lemon zest and Grand Marnier.
  4. Pour the pudding into 5 small ramekins. Place in the fridge for at least 30 minutes - more if you want a firmer pudding.

I like it!
I wanted some tapioca pudding, and I think this recipe will offer it a cool new dimension. Going to test this out in the morning. :-)


This was delicious, I love orange or citrus and the Grand Marnier made this super special. *I added a tiny touch of rum too*
