Tapioca Pudding with Grand Marnier

- 1 egg, lightly beaten shopping list
- 1/4 cup white sugar shopping list
- 1/4 tsp salt shopping list
- 2 1/2 cups milk shopping list
- 3 tbsp quick tapioca shopping list
- zest of one lemon shopping list
- 1 tbsp Grand Marnier shopping list
How to make it
- In a large microwaveable bowl, stir together the egg, sugar, salt, milk and tapioca, making sure the sugar is disolved. Let this mixture sit for 5 minutes.
- Microwave the pudding for 8-10 minutes on high, stirring well every 2 minutes. Keep a close eye on the pudding near the end of the time to make sure it doesn't boil over and make a mess of your microwave.
- Remove the bowl from the microwave and stir in the lemon zest and Grand Marnier.
- Pour the pudding into 5 small ramekins. Place in the fridge for at least 30 minutes - more if you want a firmer pudding.
