Ingredients

How to make it

  • in about 1 gallon water boil potatoes until just past raw stage. They should be tender but not mushy.
  • Drain and run under cold water until they are just less than luke warm
  • Drain and set aside in large bowl
  • Mix all other ingredients together and pour over potatoes.
  • mix gently to coat then refrigerate to cool it off and thicken up
  • or just eat it warm :-)

    I love using red potatoes in my potato salad and my mashed potatoes. The flavor is so much better and if you leave the skins on, which I do, it's so pretty.
