Poulet Marengo au Chardonnay

- 3-4 tbs olive oil shopping list
- 4 chicken breasts shopping list
- 1 garlic clove, crushed shopping list
- ½ tsp dried oregano shopping list
- salt pepper to taste shopping list
- 1 tbs flour shopping list
- 4 large or 6 small tomatoes, pealed, seeded, quartered. Or canned tomatoes shopping list
- 1 doz pearl onions or 1 medium chopped (White/purple) shopping list
- 1 tbs parsley (stocks included) shopping list
- 2 cups Chardonnay wine shopping list
How to make it
- Heat oil in large sauce pan. Brown chicken
- Remove chicken and saute onions.
- Return chicken to pan with onions and add tomatoes, garlic, oregano, salt, and pepper to taste.
- Sprinkle flour a little bit at a time, stirring until well blended.
- Add parsley, then wine, then orange zest,
- Cover and cook for 45 minutes. If sauce is too thin, thicken with 1 tsp. corn starch with 1 1/2 tsp. water.
