Poulet Marengo Au Chardonnay Recipe
This is a family recipe that I recieved from my great grandmother. It's absolutly delicious

Ingredients
  • 3-4 tbs olive oil
  • 4 chicken breasts
  • 1 garlic clove, crushed
  • ½ tsp dried oregano
  • Salt Pepper to taste
  • 1 tbs flour
  • 4 large or 6 small tomatoes, pealed, seeded, quartered. Or canned tomatoes
  • 1 doz pearl onions or 1 medium chopped (White/purple)
  • 1 tbs parsley (stocks included)
  • 2 cups Chardonnay wine

Directions
  1. Heat oil in large sauce pan. Brown chicken
  2. Remove chicken and saute onions.
  3. Return chicken to pan with onions and add tomatoes, garlic, oregano, salt, and pepper to taste.
  4. Sprinkle flour a little bit at a time, stirring until well blended.
  5. Add parsley, then wine, then orange zest,
  6. Cover and cook for 45 minutes. If sauce is too thin, thicken with 1 tsp. corn starch with 1 1/2 tsp. water.
