How to make it

  • Place the garlic into a small stew pot.
  • Add oil.
  • Bring to a boil, then reduce heat and simmer for 30 minutes. Check occasionally to make sure garlic isn't browning too much and adjust heat accordingly. You want the garlic to be LIGHTLY golden brown when done.
  • Drain oil and place in jar in fridge. Use it wherever you would use regular cooking oil or olive oil, in dishes that require or are enhanced by the flavor of garlic. OBVIOUSLY not for baking cakes, etc! ;-)
  • Use the cooked garlic also, as an addition to soups, stews, whatever. I mash it into a paste and use it to make garlic bread.
