Muskoka Goat Cheese Dip Recipe
This is a terrific appetizer and is always a hit at summer BBQ's. Serve it on a large platter along with slices of baguette. Cook time is marinating time. You could also use feta cheese if you prefer although the taste will be a bit different.

Ingredients
  • 1 cup olive oil
  • 1/3 cup fresh basil (chopped)
  • 1/3 cup sun dried tomatoes (chopped)
  • 1/4 cup fresh parsley (chopped)
  • 1/4 tsp dried thyme
  • 1/4 tsp hot pepper flakes
  • 1/2 tsp dried rosemary
  • 4-5 cloves garlic (minced)
  • 2 large goat cheese logs (freeze slightly to slice or just crumble)

Directions
  1. Crumble or slice cheese into the bottom of serving dish
  2. Chop all other ingredients and combine in bowl.
  3. Pour over the goat cheese
  4. Marinate over night or at least a couple of hours
  5. Leave at room temperature for at least 1 hour before serving.
  6. Serve with sliced baguette or crackers
