Simply Spicys Chana Masala

- ---Spice Blend--- shopping list
- 2 tsp coriander shopping list
- 1 tsp cumin shopping list
- 1 tsp peppercorns shopping list
- 1 cinnamon stick shopping list
- 2 whole cloves shopping list
- ---Curry--- shopping list
- 2 bay leaves shopping list
- 1 onion, chopped shopping list
- 1 tsp minced garlic shopping list
- 1 tsp grated ginger shopping list
- 1/2 tsp cayenne shopping list
- 1/4 tsp turmeric shopping list
- 1/2 tsp garam masala shopping list
- 3 peeled tomatoes, chopped shopping list
- 19 oz. cooked chickpeas, drained and rinsed shopping list
- 1 tsp lime juice shopping list
How to make it
- For the spice blend, roast all ingredients in a dry frypan. Remove to a grinder and process until fine. Set aside.
- Heat water in a heavy bottomed pan.
- Add bay leaves, and stir.
- Cook for 2 minutes.
- Add onion, saute (adding water as required) until golden brown in colour.
- Add garlic and ginger, cook, stirring, 2 - 3 minutes.
- Add cayenne, turmeric powder, garam masala and spice mix and fry for a minute. Add tomatoes, cook 5 minutes.
- Add the chickpeas, cover and cook 5-10 minutes on low.
- Add water as required.
- Remove from heat.
- Add lime juice, then salt to taste.
