How to make it

  • 1. Place Shanks, Cinnamon, Tuneric, Coriander Seed, Black Pepper, Garlic and Stock in a thick based pot good for stewing.
  • 2. Bring to the boil and simmer for 1 hour.
  • 3. Add Brown lentils, and tomatoe if you feel like it, and simmer for 1 hour.
  • 4. Remove Shank and remove meat from the bone. Whilst doing this reduce the sauce and replace the meat once decently reduced.
  • 5. Add chopped Coriander and Sambal Olek or Chilli and serve.
