How to make it

  • Lightly grease a 15x10x1-inch baking pan; set aside. In a large bowl stir together the flour, granulated sugar, baking soda, and salt. Stir in undrained pineapple, eggs and 1 teaspoon vanilla until combined. Stir in 1/2 cup nuts. Spread mixture into prepared pan. Pan will be full.
  • Bake in a 350 degree F oven for 20 to 25 minutes or until a toothpick
  • inserted near the center comes out clean. Cool in pan on a wire rack.
  • For frosting, in a large mixing bowl beat the cream cheese, butter,
  • and 1 teaspoon vanilla with an electric mixer on medium speed until
  • combined. Gradually beat in the powdered sugar until frosting is smooth.
  • Spread frosting over cooled cake. Sprinkle with the remaining 1/2 cup nuts.
