Pineapple Snack Cake

- 2 cups all-purpose flour shopping list
- 2 cups granulated sugar shopping list
- 1-1/2 teaspoons baking soda shopping list
- 1/2 teaspoon salt shopping list
- 1 15-1/2-ounce can or 2 8-ounce cans crushed pineapple (in heavy syrup) shopping list
- 2 eggs, slightly beaten shopping list
- 1 teaspoon vanilla shopping list
- 1/2 cup chopped nuts shopping list
- 1 8-ounce package cream cheese, softened shopping list
- 1/2 cup butter or margarine, softened shopping list
- 1 teaspoon vanilla shopping list
- 1 16-ounce box powdered sugar shopping list
- 1/2 cup chopped nuts shopping list
How to make it
- Lightly grease a 15x10x1-inch baking pan; set aside. In a large bowl stir together the flour, granulated sugar, baking soda, and salt. Stir in undrained pineapple, eggs and 1 teaspoon vanilla until combined. Stir in 1/2 cup nuts. Spread mixture into prepared pan. Pan will be full.
- Bake in a 350 degree F oven for 20 to 25 minutes or until a toothpick
- inserted near the center comes out clean. Cool in pan on a wire rack.
- For frosting, in a large mixing bowl beat the cream cheese, butter,
- and 1 teaspoon vanilla with an electric mixer on medium speed until
- combined. Gradually beat in the powdered sugar until frosting is smooth.
- Spread frosting over cooled cake. Sprinkle with the remaining 1/2 cup nuts.
