Ingredients
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1-1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 15-1/2-ounce can or 2 8-ounce cans crushed pineapple (in heavy syrup)
  • 2 eggs, slightly beaten
  • 1 teaspoon vanilla
  • 1/2 cup chopped nuts
  • 1 8-ounce package cream cheese, softened
  • 1/2 cup butter or margarine, softened
  • 1 teaspoon vanilla
  • 1 16-ounce box powdered sugar
  • 1/2 cup chopped nuts

Directions
  1. Lightly grease a 15x10x1-inch baking pan; set aside. In a large bowl stir together the flour, granulated sugar, baking soda, and salt. Stir in undrained pineapple, eggs and 1 teaspoon vanilla until combined. Stir in 1/2 cup nuts. Spread mixture into prepared pan. Pan will be full.
  2. Bake in a 350 degree F oven for 20 to 25 minutes or until a toothpick
  3. inserted near the center comes out clean. Cool in pan on a wire rack.
  4. For frosting, in a large mixing bowl beat the cream cheese, butter,
  5. and 1 teaspoon vanilla with an electric mixer on medium speed until
  6. combined. Gradually beat in the powdered sugar until frosting is smooth.
  7. Spread frosting over cooled cake. Sprinkle with the remaining 1/2 cup nuts.
