Healthy Tuna Casserole Recipe
An old WW recipe that we liked so much we have kept it around for years. Tasty, healthy, easy to prepare what more could we ask for. Hope you enjoy it too

Ingredients
  • 1 package (16 oz) frozen cauliflower or if wish can use fresh just adjust cooking time
  • 1 can water packed tuna drained
  • 1 cup canned or frozen peas
  • 1 TBLS dried minced onions - again can use fresh if wish
  • 2 TBLS tomato juice
  • salt and pepper to taste
  • can add a can of drained mushrooms sliced or pieces to the dish if wish

Directions
  1. Cook cauliflower till fairly soft as it is to be mashed
  2. Drain cauliflower and roughly mash it
  3. Add all other ingredients
  4. Put into baking dish sprayed with cooking spray
  5. Bake in oven at 350°F for 20 minutes
