Ingredients
  • 6 fresh apricots, halved
  • 1 1-oz. can apricot nectar
  • 1/4 cup sugar
  • 1 1/2 cups champagne
  • crushed ice
  • fresh apricot slices and fresh mint sprigs for garnish

Directions
  1. Process first 3 ingredients in a blender until smooth, stopping to scrape down sides. Stir in champagne, and serve immediately over crushed ice. Garnish if desired.
