Ingredients

6 fresh apricots, halved

1 1-oz. can apricot nectar

1/4 cup sugar

1 1/2 cups champagne

crushed ice

fresh apricot slices and fresh mint sprigs for garnish

Directions

Process first 3 ingredients in a blender until smooth, stopping to scrape down sides. Stir in champagne, and serve immediately over crushed ice. Garnish if desired.
