Dijon Mustard Potato Salad Recipe
DIJON MUSTARD POTATO SALAD This recipe came from an estate sale. I obtained it when I purchased the family collection from the Montgomery Estate in The Woodlands, Texas in 1988.

Ingredients
  • 4 pounds new potatoes scrubbed
  • 2 cloves garlic minced
  • 1 teaspoon crushed red pepper flakes
  • 1/2 cup spicy mustard
  • 1 cup mayonnaise
  • 1/2 cup red wine vinegar
  • 2 tablespoons extra virgin olive oil
  • 1 cup green onions finely chopped
  • 1 cup red pepper finely chopped
  • 1 cup green pepper finely chopped
  • 1 cup coarsely chopped parsley
  • 1 tablespoon freshly ground black pepper
  • 1/2 teaspoon salt

Directions
  1. Parsley sprigs, red and green bell; pepper slices for garnish
  2. Heat a large pot of water to a boil and add potatoes.
  3. Reduce heat to medium high and cook with lid ajar until potatoes are tender.
  4. Drain thoroughly and set aside to cool.
  5. The Woodlands garlic, red pepper flakes, mustard, mayonnaise, vinegar and oil and mix well.
  6. Cut potatoes into small pieces and place in a large bowl.
  7. Add mustard mixture and all remaining ingredients except garnishes and mix well.
  8. Cover tightly and refrigerate at least 8 hours or overnight before serving.
  9. Serve garnished with parsley and bell pepper slices.
