Dijon Mustard Potato Salad

- 4 pounds new potatoes scrubbed shopping list
- 2 cloves garlic minced shopping list
- 1 teaspoon crushed red pepper flakes shopping list
- 1/2 cup spicy mustard shopping list
- 1 cup mayonnaise shopping list
- 1/2 cup red wine vinegar shopping list
- 2 tablespoons extra virgin olive oil shopping list
- 1 cup green onions finely chopped shopping list
- 1 cup red pepper finely chopped shopping list
- 1 cup green pepper finely chopped shopping list
- 1 cup coarsely chopped parsley shopping list
- 1 tablespoon freshly ground black pepper shopping list
- 1/2 teaspoon salt shopping list
How to make it
- Parsley sprigs, red and green bell; pepper slices for garnish
- Heat a large pot of water to a boil and add potatoes.
- Reduce heat to medium high and cook with lid ajar until potatoes are tender.
- Drain thoroughly and set aside to cool.
- The Woodlands garlic, red pepper flakes, mustard, mayonnaise, vinegar and oil and mix well.
- Cut potatoes into small pieces and place in a large bowl.
- Add mustard mixture and all remaining ingredients except garnishes and mix well.
- Cover tightly and refrigerate at least 8 hours or overnight before serving.
- Serve garnished with parsley and bell pepper slices.
