Angel Cake

- 1 1/2 cups egg whites (10 to 12 large) shopping list
- 1 1/2 cups sifted powdered sugar shopping list
- 1 cup sifted cake flour or sifted all purpose flour shopping list
- 1 1/2 teaspoons cream of tartar shopping list
- 1 teaspoon vanilla shopping list
- 1 cup sugar shopping list
How to make it
- Bring egg whites to room temperature.
- sift powdered sugar and flour together.
- in a large bowl beat egg whites, cream of tartar, and vanilla with an electric mixer on medium speed untill stiff peaks form (or tips stand straight)
- sift about one-forth of the flour mixture over beaten egg whites; fold in gently
- repeat; folding in remaining flour mixture by fourths.
- pour into ungreased 10-inch tube pan.
- bake on lowest rack in a 350 degree oven for 40 minutes or till top springs back when lighty touched
- immediately invert cake (leave in pan)
- cool throroughly.
- loosen sides of cake from pan; remove cake
- frost if desired
- enjoy
