Ingredients
  • 2 beaten eggs
  • 1 1/2 cups milk
  • 1 tbsp. cooking oil
  • 1 cup all-purpose flour
  • 1/4 tsp. salt OR, FOR SWEETER CREPES, 2 tbsp. sugar

Directions
  1. Combine all of the ingredients and beat until well mixed.
  2. Heat a lightly greased skillet; remove from heat. Spoon in 2 tbsp. batter (I used 4 tbsp., b/c I couldn't get it to cover the bottom of the skillet with only 2). Return to heat; brown on 1 side only.
  3. Continue making the crepes until the batter is used up. Invert over paper towels.
  4. Top with your choice of spreads or fillings and enjoy!

You don't need a crepe maker, a perfect pan for crepes is about an 8" non-stick skillet. If it is fairly new and unscarred by utensils you won't even have to spray it, yet the crepe will slip right out! A trick is not to try to make them too big. There's more room for error when trying to flip a 10" or 12" crepe!
