Cuban Meatloaf Recipe
Low fat and interesting way to serve an old-fashioned traditional meal.

Ingredients
  • 1 pound of ground beef
  • 1 pound of ground turkey
  • 2 cups bread crumbs (for crunchier texture, substitute corn flake crumbs)
  • 2 eggs (use egg beaters for lower fat/cholesterol)
  • 1/4 cup chopped onion
  • 1/4 cup chopped pepper
  • salt to taste
  • 1/4 cup evaporated milk (use skim milk for very different taste, but lower fat)
  • 1 cup salsa
  • oregano, cilantro and basil to taste
  • saffron if you can afford it!
  • 1/2 cup sour cream
  • 1/4 cup shredded mexican combo or cheddar chees

Directions
  1. Combine turkey, ground beef, bread crumbs, eggs, onion, green pepper, spices, milk and 1/2 cup of the salsa
  2. Shape into loaf
  3. Bake in greased loaf pan or for crunchier outside, 8x8 pyware at 350 for 45 minutes.
  4. While this is cooking, prepare a "frosting" with sour cream, shredded cheese, and the remainder 1/2 cup of salsa
  5. After the initial 45 minutes, cover loaf with sour cream and let bake for another 20 to 30 minutes.
  6. Use low- or no-fat sour cream, skim milk, egg beaters and ground turkey for the entire meat base to create a really low-fat, low cholesterol dish.

Love it, saffron if you can afford it! I have my supplier from Miami (a friend who moved down there). I also brought a bunch back with me my last two trips. But my mom passed away in March, so probably no more trips for me. What we'd pay $16 for here--IF YOU CAN FIND IT--is less than $3 there.


After reading this recipe I went and posted two of my favorite Cuban recipes--both with saffron.
