Ingredients
  • 1/4 cup grated Parmesan cheese
  • 2 Tbsp Romano cheese
  • 1/8 tsp black pepper
  • 2 cups firmly packed fresh basil leaves, washed and dried
  • 1 Tbsp plus 1 tsp olive oil
  • 2 cloves garlic, minced
  • 1 ounce pine nuts

Directions
  1. In a blender combine basil, garlic and pine nuts and process while adding olive oil, until slightly gritty in texture. Transfer to a small bowl and add cheese and black pepper. Mix well and serve immediately or cover and refrigerate. When ready to use bring to room temperature before serving and remix.

Alterations


I use the same exact recipe except for once in a while to change it up a bit, Ii add a little cream cheese and less olive oil. It's really good!


Another suggestion is to freeze this in ice cube trays so you can thaw out small amounts as needed.
