How to make it

  • Brown the chicken and meat in olive oil for 10 mins .
  • Remove .
  • Add 2 tbsp olive oil and fry the onions and garlic briefly .
  • Remove garlic as soon as it begins to brown .
  • When onion starts to brown , add tomatoes , salt and cook for 10 mins .
  • Place the mussels in pan.
  • Cover and cook at high heat for 5 mins until shell opens .
  • In another pot place the chicken , meat , bay leaf and stock and cook .
  • Add prawns to boiling salted water for 3 mins and drain .
  • In a large paella pan , brown the rice .
  • Gradually add the cooking liquid meat , strips of pepper , peas and cook until the rice is tender .
  • Dissolve the saffron in water and stir into rice along with the remaining ing .
  • Mix well and place in hot oven for 5 mins .
  • The paella is ready to be served after having cooled for several minutes .
