Ingredients
  • 60 g butter melted
  • 4 eggs
  • 1 cup plain flour with 1/2 tspn baking powder
  • 2 cups skim milk
  • assorted fresh herbs and powdered spices- curry and coriander is great, or chili and parsley... you choose!!!
  • 1 cup grated low fat cheese
  • 1 onion finely chopped
  • any left over veges (pumpkin or sweet potato is YUM in this pie)
  • 1 cup (ish) of ham or leftover meats
  • Add another egg if it gets too dry, or a little water

Directions
  1. Preheat oven to 180 degrees C
  2. Fold all ingredients except butter together
  3. Add melted butter to mix and fold through
  4. Spray pie form or casserole dish, and add mix
  5. Sprinkle breadcrumbs and grated cheese on top to get some crunch going
  6. Cook for 40-45 mins at 180degrees, then 10 mins at 120 degrees C
  7. Serve with a leafy salad and crusty bread
