Blueberry Muffins Plain And Simple

- 2 cups all-purpose flour shopping list
- 2/3 cup sugar shopping list
- 1 Tbsp. baking powder shopping list
- 1/2 teaspoon salt shopping list
- 1-1/2 cups fresh blueberries, rinsed shopping list
- Note: I have also used raspberries, blackberries and strawberries in this muffin recipe but with the strawberries, I cut the amount in half and slice them into quarters. shopping list
- 2 eggs shopping list
- 1 tsp. vanilla extract shopping list
- 1/2 cup milk shopping list
- 1/2 cup butter or margarine, melted shopping list
How to make it
- In a large bowl mix flour, sugar, baking powder, and salt.
- Add blueberries and stir to coat evenly.
- In a small bowl beat/whisk eggs and vanilla with fork.
- Beat in milk and melted butter.
- Add to blueberry mixture.
- Stir until just blended but make certain all the egg white is mixed in completely.
- Use double paper liners in muffin cups and divide batter evenly to make 12 muffins.
- Bake in a preheated 400° degree F. oven for about 20-25 minutes, until a toothpick inserted in center comes out clean.
- Cool slightly then remove from muffin tins to a rack to continue cooling.
- Options: Place chopped walnuts or sliced almonds on top before baking or sprinkle with sugar. This recipe can also be made into a 9-inch square coffee cake (bake 30-35 minutes) or 36 miniature muffins (bake about 12 minutes).
