Smashed Red Blissh Potatoes W Caramelized Shallots Recipe

Ingredients
  • 1 pound red bliss potatoes, skin on, washed, and quartered
  • 2-3 oz. butter
  • 4 shallots, thinly sliced lengthwise
  • 1 garlic clove, thinly sliced lengthwise
  • 1 teaspoon fresh thyme leaves
  • S&P

Directions
  1. Place potatoes in a large pot of cold salted water, and bring to a boil. Cook until tender
  2. Once the potatoes are done and drained, melt the butter in a saute pan and slowly saute shallots, garlic, and thyme, until the shallots are caramelized.
  3. Season the mixture with salt and pepper
  4. Transfer the potatoes to the pan with the shallots and garlic.
  5. Smash the potatoes with a slotted spoon over high heat and cook just enough to heat through and lightly brown the edges
  6. Adjust seasonings as you'd like

have planted two varieties of red potatoes this year. This recipe will be the firs I will use for them.

I just bought new red potatoes at the farmer's market today. They should be perfect for this. I have thyme growing in the garden and will use a nice sweet onion in place of the shallot. Your recipe sounds wonderful.
