Holly Pasta Recipe
My husband's favourite- he named it. The tomatoes burst pleasantly in your mouth, cleansing the palate. The mint balances the heat nicely- don't skimp!!

Ingredients
  • Your favourite pasta for 2; tagliatelle, penne, etc.
  • about 1/2 c heavy cream
  • about 1/4 sherry or white wine
  • 20 or so grape tomatoes
  • 2 cloves garlic, minced
  • 1 small red onion, cut in half and sliced about 1/8 ince thick
  • 1/3 orange bell pepper, sliced thinly into strips
  • 50 g sopresata or calabrese sausage, sliced and roughly chopped
  • about 1 1/2 c fresh mint, roughly chopped
  • olive oil
  • zest of half a lemon
  • 1 T lemon juice
  • salt & pepper

Directions
  1. Heat a high sided pan over medium heat, add about 1 T olive oil.
  2. saute onion until soft and brown, add garlic, then sausage, then peppers.
  3. when peppers start to soften, add sherry & lemon juice, deglaze.
  4. lower heat to med-low and add cream. simmer.
  5. add tomatoes and do not stir (you don't want to break them). continue to simmer 2 minutes.
  6. add zest & mint, check for seasoning and adjust as necessary. add pasta and a little of the pasta water, toss & serve.

Hmmmmm Holly, My mouth is watering. Great recipe. I love Calabrese. Love the mint/lemon dressing too... I will have to give this one a go..;-)~ Jim
