Holly Pasta Recipe

Ingredients

Your favourite pasta for 2; tagliatelle, penne, etc.

about 1/2 c heavy cream

about 1/4 sherry or white wine

20 or so grape tomatoes

2 cloves garlic, minced

1 small red onion, cut in half and sliced about 1/8 ince thick

1/3 orange bell pepper, sliced thinly into strips

50 g sopresata or calabrese sausage, sliced and roughly chopped

about 1 1/2 c fresh mint, roughly chopped

olive oil

zest of half a lemon

1 T lemon juice

salt & pepper

Directions

Heat a high sided pan over medium heat, add about 1 T olive oil.

saute onion until soft and brown, add garlic, then sausage, then peppers.

when peppers start to soften, add sherry & lemon juice, deglaze.

lower heat to med-low and add cream. simmer.

add tomatoes and do not stir (you don't want to break them). continue to simmer 2 minutes.

add zest & mint, check for seasoning and adjust as necessary. add pasta and a little of the pasta water, toss & serve.
