Holly Pasta

- Your favourite pasta for 2; tagliatelle, penne, etc. shopping list
- about 1/2 c heavy cream shopping list
- about 1/4 sherry or white wine shopping list
- 20 or so grape tomatoes shopping list
- 2 cloves garlic, minced shopping list
- 1 small red onion, cut in half and sliced about 1/8 ince thick shopping list
- 1/3 orange bell pepper, sliced thinly into strips shopping list
- 50 g sopresata or calabrese sausage, sliced and roughly chopped shopping list
- about 1 1/2 c fresh mint, roughly chopped shopping list
- olive oil shopping list
- zest of half a lemon shopping list
- 1 T lemon juice shopping list
- salt & pepper shopping list
How to make it
- Heat a high sided pan over medium heat, add about 1 T olive oil.
- saute onion until soft and brown, add garlic, then sausage, then peppers.
- when peppers start to soften, add sherry & lemon juice, deglaze.
- lower heat to med-low and add cream. simmer.
- add tomatoes and do not stir (you don't want to break them). continue to simmer 2 minutes.
- add zest & mint, check for seasoning and adjust as necessary. add pasta and a little of the pasta water, toss & serve.

Hmmmmm Holly, My mouth is watering. Great recipe. I love Calabrese. Love the mint/lemon dressing too... I will have to give this one a go..;-)~ Jim
