How to make it

  • Heat a high sided pan over medium heat, add about 1 T olive oil.
  • saute onion until soft and brown, add garlic, then sausage, then peppers.
  • when peppers start to soften, add sherry & lemon juice, deglaze.
  • lower heat to med-low and add cream. simmer.
  • add tomatoes and do not stir (you don't want to break them). continue to simmer 2 minutes.
  • add zest & mint, check for seasoning and adjust as necessary. add pasta and a little of the pasta water, toss & serve.
