How to make it

  • Great tip on cooking easy quick chicken.
  • Defrost Chicken tenders.
  • Lightly cover in olive oil and pepper (omit the salt, it dries it out!)
  • Bake at 350 for 20 min in a shallow baking sheet (with sides)
  • Cool slightly and chop up in 1/2 inch pieces.
  • Now...for the salad
  • Add all the above ingredients in a large bowl.
  • Break apart and crush slightly the ramen noodles (raw)
  • save seasoning pack for dressing.
  • Dressing.
  • Dressing Seasoning pack form the Ramen Noodles 1/2 cup sugar
  • 1 tablespoon sesame oil
  • 2/3 cup vegetable oil
  • 6 tablespoons seasoned rice vinegar
  • Mix in well in a large glass.....and pour onto salad...toss.
  • Add crushed ramen noodles last, toss and serve.
  • Great with rolls and diet coke.
  • For a salad like they make at Nordstrom Cafe, try
  • LIGHTHOUSE SESAME GINGER DRESSING instead of the packet dressing.
  • It's fat free and is more of a punch of flavor if you love Chinese Chicken Salad.
  • I pour a ton on and am in heaven!

    I think lollypup misunderstood that you were only saying the Lighthouse dressing version is fat free! Whatever dressing you use, this is a great salad - I love this stuff in the summer. I love the Lighthouse Sesame Ginger dressing, and will have to try it on this salad for a fat-free version...delish!

    This is NOT fat free.......Veg. oil and sesame oil are fats. You might not want to pour it on by the ton anymore. C'est fattening ma chet.
