Sweet N Tangy Short Ribs Recipe
This dish I got out of one of my slow cooker recipe books..it is a great change from chicken, and a real palate pleaser! It takes a little longer to make, but the results are worth it!

Ingredients
  • 1 tbls vegetable oil
  • 4 lb beef short ribs
  • 1 large sweet onion, cut in half, halves sliced
  • Sauce:
  • 1 12 oz bottle chili sauce
  • 3/4 apricot preserves
  • 2 tbls packed brown sugar
  • 2 tbls cider vinegar
  • 2 tbls worsestershire sauce (aka "Lea and Perrins"!)
  • 2 tsp ground mustard
  • 2 cloves garlic, finely chopped

Directions
  1. In a 12 inch non-stick skillet, heat oil over med-high heat. Add ribs, in batches, if necessary; cook 6-8 minutes, turning occasionally, until brown on all sides
  2. Spray 4-5 qt slow cooker with cooking spray. Place onion in cooker. Top with ribs. Cover; cook on low heat setting 8 hours
  3. After 8 hours, In a 2 qt saucepan, cook sauce ingredients over low heat 15-20 minutes, stirring frequently, until sauce has thickened.
  4. Drain excess liquid from cooker. Pour sauce over ribs. Increase heat setting to High. Cover; cook about 1 hour longer or until meat begins to separate from bones.
