Sweet n Tangy Short Ribs

- 1 tbls vegetable oil shopping list
- 4 lb beef short ribs shopping list
- 1 large sweet onion, cut in half, halves sliced shopping list
- Sauce: shopping list
- 1 12 oz bottle chili sauce shopping list
- 3/4 apricot preserves shopping list
- 2 tbls packed brown sugar shopping list
- 2 tbls cider vinegar shopping list
- 2 tbls worsestershire sauce (aka "Lea and Perrins"!) shopping list
- 2 tsp ground mustard shopping list
- 2 cloves garlic, finely chopped shopping list
How to make it
- In a 12 inch non-stick skillet, heat oil over med-high heat. Add ribs, in batches, if necessary; cook 6-8 minutes, turning occasionally, until brown on all sides
- Spray 4-5 qt slow cooker with cooking spray. Place onion in cooker. Top with ribs. Cover; cook on low heat setting 8 hours
- After 8 hours, In a 2 qt saucepan, cook sauce ingredients over low heat 15-20 minutes, stirring frequently, until sauce has thickened.
- Drain excess liquid from cooker. Pour sauce over ribs. Increase heat setting to High. Cover; cook about 1 hour longer or until meat begins to separate from bones.
