Pilfered Spinach a la creme

- 1 large bag of spinach (16 oz. or more) shopping list
- 1/2 C onion, minced shopping list
- 4 cloves garlic, minced shopping list
- 2 T red bell pepper, minced shopping list
- 2 T butter or olive oil (or a combo) shopping list
- 1/2 C cream shopping list
- 1/2 C chicken broth shopping list
- salt and pepper to taste (about 1/2 t each to start) shopping list
How to make it
- Wilt the spinach in the microwave by just sprinkling it with water and cooking on high for about 4 minutes. Drain well and coarsely chop.
- Saute the onion, garlic, and pepper in the butter or oil until just tender.
- Add cream and broth. Boil 15 minutes or until reduced to 3/4 C.
- Add spinach, salt, and pepper and stir to heat through. Voila.
