Ingredients
  • 1 large bag of spinach (16 oz. or more)
  • 1/2 C onion, minced
  • 4 cloves garlic, minced
  • 2 T red bell pepper, minced
  • 2 T butter or olive oil (or a combo)
  • 1/2 C cream
  • 1/2 C chicken broth
  • salt and pepper to taste (about 1/2 t each to start)

Directions
  1. Wilt the spinach in the microwave by just sprinkling it with water and cooking on high for about 4 minutes. Drain well and coarsely chop.
  2. Saute the onion, garlic, and pepper in the butter or oil until just tender.
  3. Add cream and broth. Boil 15 minutes or until reduced to 3/4 C.
  4. Add spinach, salt, and pepper and stir to heat through. Voila.
