Chicken Crepes Dolores Recipe
I make this dish and freeze when expecting guests and "one the town" so need make-ahead dishes ready

Ingredients
  • Desired number of cooked crepes
  • 3 to 4 lb. chicken
  • 1-1/4 lbs grated Swiss cheese
  • 2 cups heavy cream
  • 1 tsp salt
  • 1 tsp pepper
  • 2 or more canned Jalapeno chiles, seeded, rinsed and finely minced

Directions
  1. Cook chicken; remove meat from bones, skin and dicd meat.
  2. Reserve 1 cup cheese.
  3. Combined diced chicken, remaining cheese, salt, pepper and jalapenos.
  4. Place a large spoonful of chicken mixture on each crepe and roll up.
  5. Place filled, rolled crepes in a shallow, ungreased before making dish and top wih reserved cup of cheese.
  6. Pour cream over all.
  7. Bake at 325 degrees for 20 to 30 minutes or until thoroughly heated.
  8. These may be frozen without cream. Thaw and add cream just before baking.
