How to make it

  • Prep the veggies and apples
  • In a large skillet on medium heat oil for sauting
  • Add onions and garlic-saute until translucent
  • Add potatoes-saute for 2-4 minutes
  • Add apples-saute until tender
  • Add peas: I use frozen because it's easier
  • Add half-n-half-let simmer for 5 minutes then add curry
  • Curry powder should be increased or decreased according to personal taste: I like spicy so I usually add more
  • Simmer mixture until potatoes are tender-About 10 minutes.
  • Top with raisins and peanuts. I sometimes add the raisins in while simmer-they turn out plump and juicy
  • Serve over brown rice
