How to make it

  • Blend the pepper , ginger and garlic .
  • Rinse the chickens , pat dry .
  • Marinate and chill for couple of hrs .
  • Pre heat oven at 180 deg .
  • Line a roasting pan .
  • Place the birds with the chest down , wings tucked under .
  • Roast for 30 mins uncovered .
  • Turn the birds and brush with oil .
  • Roast for 30 mins or until it's cooked .
  • Cover loosely with foil and leave it for 15 mins .
  • Cut each bird into half .
  • ...................................................................
  • Smoke the oil at high flame .
  • Pour it over ginger and onion and add the sauce .
  • Put the oil over the bird before serving .
