TEJAS CREAMED EGGS This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the Elmquist Estate in Heath, Texas in 1981.

Ingredients
  • 1 tablespoon unsalted butter at room temperature
  • 8 large eggs
  • 1/3 cup fined grated Romano cheese
  • 1 large bunch fresh chives minced
  • 1 cup heavy whipping cream
  • 1 teaspoon salt
  • 2 teaspoons freshly ground black pepper

Directions
  1. Preheat oven to 325 then lightly butter eight ramekins.
  2. Break 1 egg into each ramekin and sprinkle with cheese and chives.
  3. Pour 2 tablespoons cream over each and season with salt and pepper.
  4. Place ramekins on a baking sheet and transfer to oven.
  5. Bake until eggs are set and cream is bubbling lightly around the edges.
  6. Remove from oven and serve immediately.

Elegant and yummy!


Oh. My. Gosh.

This is seriously one of the best (and easiest!) egg recipes ever. I made one this morning for myself and wow - i was very impressed. I served it with some fresh fruit to help counteract the rich, creamy eggs. It was so good.

I'm gonna make these for when I have people over for brunch. I know it'll be a crowd pleaser. :)
