Spinach With Strawberries And Honey Dressing Recipe
This is a very refreshing salad. There are many flavors and textures, but they all blend together very well. This is one of my favorite salads!

Ingredients
  • 6 oz fresh spinach (8-10 cups) clean, trimmed, and dry
  • 2 tbsp balsamic vinegar
  • 2 tbsp rice vinegar
  • 2 tbsp honey
  • 2 tsp Dijon mustard
  • salt and pepper, to taste
  • 1 c fresh strawberries, thickly sliced
  • 1 tbsp poppy seeds or sesame seeds, lightly toasted
  • 1 sm red onion, thinly sliced

Directions
  1. Tear spinach into bite-sized pieces and place in a salad bowl. In a seperate bowl, whisk together vinegars, honey, mustard, salt, and pepper. Add to spinach and toss lightly. Add strawberries, poppy seeds and onions. Toss lightly and serve.
  2. *For best resuts, wait until serving time to add dressing to spinach. This prevents the spinach from wilting. Sliced red bell pepper is also is also good in this salad.
  3. 50 calories, 2 g protein, 1 g fat, 11 g carbs, 69 mg sodium, 0 mg cholesterol per serving.

Love this combo! I've never tried it with the Dijon Mustard before! I bet some grilled chicken would be awesome in this as well! High five from me!
