Truly Red Spiced Dal

- 3/4 cup water shopping list
- 1/2 cup red lentils shopping list
- 1/2 tsp mustard seed shopping list
- 1 large white onion, chopped shopping list
- 1 tbsp minced ginger shopping list
- 1 jalapeno pepper, seeds IN, minced shopping list
- 3 cloves garlic, minced shopping list
- 1/2 tbsp coriander shopping list
- 2 tsp cumin shopping list
- 1 plum tomato, chopped shopping list
- 1/2 cup V8 or tomato juice shopping list
- salt to taste shopping list
- 1/2 tbsp cilantro shopping list
How to make it
- Bring water to a boil in a small saucepan.
- Add lentils, stirring, then reduce heat.
- Cover and simmer 15 minutes.
- Meanwhile, heat a large, non-stick skillet and add mustard seeds.
- When they begin to pop, add onion, ginger, jalapeno and garlic.
- Add a splash of water and cook until the onions and garlic are golden.
- Add coriander and cumin, cook 1 minute.
- Add tomatoes and cook, stirring, until tomato is saucy.
- Add V8 and bring to a boil.
- Reduce heat and cook 6 minutes.
- Stir in cooked lentils and remove from heat.
- Add salt and cilantro, stirring well.
- Serve.
