How to make it

  • Bring water to a boil in a small saucepan.
  • Add lentils, stirring, then reduce heat.
  • Cover and simmer 15 minutes.
  • Meanwhile, heat a large, non-stick skillet and add mustard seeds.
  • When they begin to pop, add onion, ginger, jalapeno and garlic.
  • Add a splash of water and cook until the onions and garlic are golden.
  • Add coriander and cumin, cook 1 minute.
  • Add tomatoes and cook, stirring, until tomato is saucy.
  • Add V8 and bring to a boil.
  • Reduce heat and cook 6 minutes.
  • Stir in cooked lentils and remove from heat.
  • Add salt and cilantro, stirring well.
  • Serve.
