Apple Carrot Muffins

- 1 large granny smith apple shopping list
- 3 medium carrots peeled shopping list
- 3 egg whites lightly beaten shopping list
- 2 tablespoons canola oil shopping list
- 1/4 cup unsweetened applesauce shopping list
- 1/2 cup dark brown sugar shopping list
- 1 teaspoon vanilla shopping list
- 3/4 cup flour shopping list
- 1-1/2 teaspoons baking soda shopping list
- 1-1/2 teaspoons baking powder shopping list
- 1 teaspoon cinnamon shopping list
- 1/2 teaspoon nutmeg shopping list
- 1/4 teaspoon cloves shopping list
- 1/4 teaspoon salt shopping list
- 1/3 cup quick cooking oatmeal shopping list
- 2/3 cup dark or golden raisins shopping list
- 1/2 cup grape nuts cereal shopping list
How to make it
- Preheat oven to 350 then spray nine regular muffins cups with cooking spray and set aside.
- Cut apple into quarters and remove core.
- Coarsely grate apple and carrots either by hand or with a food processor.
- Combine with lightly beaten egg whites, oil, applesauce, brown sugar and vanilla.
- Sift together the flour, soda, baking powder, cinnamon, nutmeg, cloves and salt.
- Stir into the moist ingredients then add oatmeal, raisins and cereal.
- Spoon in the prepared muffin tins filling to the top.
- Bake 30 minutes then cool a few minutes in pan before moving onto a cooling rack.
