How to make it

  • Hollow out 1 small, seedless watermelon and cut flesh into 10inch rounds with a small cookie cutter.
  • Add additional melon rounds, cantaloupes, honeydew and pineapple for a total of 8 cups.Place in a large serving bowl and set aside.
  • In a small saucepan, heat 1/2 cup sugar and 1/4 cup water over medium heat until sugar dissolves, about 5 minutes. Remove from heat, add 1 tsp. grated fresh ginger and 1/2 tsp. vanilla extract.
  • Cool, pour over melon you set aside.
  • Refrigerate, spoon into melon rind
  • You can garnish with grapes, strawberries, blueberries nuts, if desired.
