Perfect Pork Tenderloin Recipe
I use apple juice to make this very tender Pork, I serve baked cinnamon apples on the side. In the winter I serve this with a wonderful gingersnap gravy. Such a wonderful moist dish!

Ingredients
  • 2 to 3 lb pork tenderloin
  • 1 tablespoon creole mustard or champaign mustard
  • cracked black pepper
  • 3 cloves garlic, sliced
  • creole spice to taste
  • 1 tsp garlic powder
  • 1 cup chopped onions
  • 1 cup chopped celery
  • 2 tablespoons butter
  • egg wash(1 egg and 1/3 cup milk or water)
  • Italian Style bread crumbs(about 1 1/2 cups)
  • 2 cups baby whole carrots
  • 3 tablespoons oil

Directions
  1. Heat oven to 350 degrees.
  2. Cut slits in pork and place garlic slices inside slits.
  3. Rub mustard over pork.
  4. Mix egg with milk in bowl.
  5. Dip pork in egg wash and then in bread crumbs.
  6. Sprinkle pork with mixture of garlic powder, cracked pepper, and creole spice.
  7. Heat oil in large skillet.
  8. Add pork and brown on each side.
  9. Remove pork and place in roasting pan or rectangular shaped pan or casserole dish.
  10. Place in oven and bake for 25 to 30 minutes.
  11. Add onions, celery, butter and carrots to a frying pan and saute until slightly tender(about 2 to 3 minutes).
  12. Stir in apple juice.
  13. Pour mixture over pork.
  14. Continue to cook 30 minutes or until pork is no longer pink in center.
  15. Lower heat to 250, cover and cook an additional 10 minutes.
