How to make it

  • Heat oven to 350 degrees.
  • Cut slits in pork and place garlic slices inside slits.
  • Rub mustard over pork.
  • Mix egg with milk in bowl.
  • Dip pork in egg wash and then in bread crumbs.
  • Sprinkle pork with mixture of garlic powder, cracked pepper, and creole spice.
  • Heat oil in large skillet.
  • Add pork and brown on each side.
  • Remove pork and place in roasting pan or rectangular shaped pan or casserole dish.
  • Place in oven and bake for 25 to 30 minutes.
  • Add onions, celery, butter and carrots to a frying pan and saute until slightly tender(about 2 to 3 minutes).
  • Stir in apple juice.
  • Pour mixture over pork.
  • Continue to cook 30 minutes or until pork is no longer pink in center.
  • Lower heat to 250, cover and cook an additional 10 minutes.
