Chicken Marsala Strips Recipe
The simple marsala-orange balsamic sauce makes this dish special. Serve with a nice rice pilaf.

Ingredients
  • 4 chicken breasts, no bones, no skin, cut into strips
  • flour with black pepper and basil mixed in
  • olive oil
  • 2 cloves garlic
  • 1 pkg mushrooms
  • 1 cup marsala wine
  • 3/4 cup orange juice
  • 2 Tbsp. Balsamic vinegar

Directions
  1. Dredge the chicken strips in the spiced flour mixture.
  2. Lightly brown the chicken in olive oil. Remove, set aside.
  3. In the same pan, saute the garlic lightly then add the mushrooms. Cook a couple minutes. Next add the browned chicken.
  4. Make a mixture of the wine, OJ and vinegar.
  5. Pour this mixture over the chicken, cover and simmer for 30 minutes.
  6. If you want more sauce for the rice, simply double the amounts of the sauce ingredients.

Adding pepper and basil to the flour is a nice touch. This dish should have a bright and lively taste. I'd have to fudge on the marsala and OJ - but this might be a candidate for my weekend cooking!
