Sage - Garlic Crusted Pork

- 2 garlic cloves, finely chopped (1 tablespoon) shopping list
- 1 tablespoon finely chopped fresh sage shopping list
- 11/4 teaspoon coarse sea salt (or less!) shopping list
- 1/4 freshly ground pepper shopping list
- 1 tablespoon olive oil shopping list
- 1 pork tenderloin (1 and 1/4 pounds) shopping list
- 1 tablespoon vegetable oil shopping list
How to make it
- Preheat oven to 400 degrees.
- Stir together garlic, sage, salt, pepper and olive oil in small bowl
- Rub mixture all over pork
- Heat a large heavy saute pan over med. high heat
- Add pork and brown all over, about 4 minutes
- Transfer pan to oven. Roast pork, turning occasionally until instant read
- thermometer read 145 to 150 degrees at thickest part. About 20 minutes
- Transfer pork to cutting board and let rest under tent of foil for 10 minutes
- Slice and serve
