How to make it

  • Preheat oven to 400 degrees.
  • Stir together garlic, sage, salt, pepper and olive oil in small bowl
  • Rub mixture all over pork
  • Heat a large heavy saute pan over med. high heat
  • Add pork and brown all over, about 4 minutes
  • Transfer pan to oven. Roast pork, turning occasionally until instant read
  • thermometer read 145 to 150 degrees at thickest part. About 20 minutes
  • Transfer pork to cutting board and let rest under tent of foil for 10 minutes
  • Slice and serve

    it was very good. the marinade kept it nice and tender. served it on a bed of fresh spinach leaves with baby new potatoes roasted alongside the joint. lovely gravy from the juices.
