Summer Tomato Soup-Zupa Pomidorowa Recipe
This is a Polish recipe. Great for when you have an over abundance of tomatoes in summer.

Ingredients
  • 1 pound fresh tomatoes
  • 1 tablespoon tomato paste
  • 3 carrots
  • 1 celery stalk
  • 1 leek
  • 2 tablespoons each of flat leaf parsley and dill (fresh)
  • 1/2 cup sour cream
  • 2 tablespoons veg. oil
  • salt and or sugar to taste

Directions
  1. Rinse, chop and simmer tomatoes in oil for 15 minutes
  2. Move to blender and blend tomatoes
  3. Rinse and peel the vegetables and put in a pot, sprinkle with oil
  4. Pour boiling water over veggies, enough to cover add salt, cook 30 min.
  5. Strain soup, add the blended tomatoes and tomato paste, bring to boil
  6. Salt and pepper to taste, mix in sour cream, parsley and dill.
  7. Serve with rice or small noodles
