How to make it

  • Preheat oven to 325 degrees.
  • In large bowl, cream butter.
  • Slowly add sugar & cream together until fluffy.
  • Add eggs, one at a time, beating well after each addition,.
  • Slowly add flour & mix well, until smooth.
  • Stir in lemon, vanilla, & seven-up.
  • Pour batter into a well-greased & floured cake pan (bundt or tube) *
  • Bake 90 mins or until done.**
  • Cool before cutting.

    ok, I didn't see the COOK'S NOTES section that I added so:

    This cake needs no topping, but it makes an awesome base for some whip cream & glazed strawberries!

    COOK'S NOTE(S):
    * I use either Baker's Joy (think that's what it's called) OR Crisco non-stick baking spray; either one has the flour already in it. Use generously on the bottom, sides, and the tube thing in the center..once cool, your cake will LEAP (or fall) out of the pan with NO sticking!

    ** I think my oven is very hot or something; cake was done in 75 mins. Again, check it at about 70 mins & watch it after that, otherwise it may be too brown on bottom.
