Frozen Apple Salad Recipe
Here's an icy fruity treat for hot days. Prep time does not include the various cool, freeze and refrigerator times. Make ahead of time and allow for the 30 minutes in the refrigerator before serving.

Ingredients
  • Small can crushed pineapple (approx 8 ounces)
  • 2 eggs
  • 1/2 cup sugar
  • 1/8 tsp salt
  • 3 Tbsp lemon juice
  • 2 cups apples, unpeeled, chopped (2 different colors are pretty)
  • 1/2 cup chopped celery
  • 1 cup heavy cream
  • Lettuce leaves

Directions
  1. Beat eggs.
  2. Drain pineapple into a measuring cup.
  3. Add water to the juice to make 1/2 cup liquid.
  4. Stir liquid into eggs.
  5. Add sugar, salt and lemon juice.
  6. On medium burner, cook and stir about 5 minutes, until the mixture thickens.
  7. Cool.
  8. When this dressing is cool, whip the heavy cream
  9. Now fold in the drained pineapple, apple, celery, and whipped cream.
  10. Spread mixture into a dish or pan that is 8 inches square. Cover and put in freezer until frozen.
  11. Half an hour before you want to serve, remove from freezer and place in refrigerator for 30 minutes.
  12. At the end of the 30 minutes, cut in 9 squares and place on lettuce leaves to serve.
