Mojito marinade

marinade good for shrimp, tofu, scallops, mahi-mahi, chicken or pork.
Ingredients
- 2 shallots (peeled and trimmed) shopping list
- 1/4 coarsley chopped mint shopping list
- 1/4 cup rum shopping list
- 1 tbsp freshly grated lime zest shopping list
- 1/2 cup lime juice shopping list
- 3 tbsp honey shopping list
- 2tbsp canola oil shopping list
- 1 tbsp kosher salt shopping list
How to make it
- place all ingredients in a food processor and pulse until shallots are finely chopped.
- pour marinade into a shallow dish or bag and use for 1 to 2 lbs of meat.
